The temperature can also be checked at any time using the core temperature sensor. The air flows over each individual tray, ensuring that the products are cooled in an extremely uniform way. The high-performance evaporator is suspended, which ensures that the base of the unit can be cleaned easily.
The rapid suction system enables you to cool your baked goods swiftly, uniformly and precisely at all stages of production. You have maximum flexibility and, with an operating temperature range of -30°C to +5°C, the unit can refrigerate and freeze both green, pre-ripened dough as well as oven-hot products fresh from the oven. The system is fitted with a core temperature sensor.
