This oven combines the advantages of two fundamentally different oven systems and enables maximum flexibility in the bakery. Rack and cooker modules can be quickly and conveniently interchanged.
You can specify six different temperature and steam phase settings. Due to its compact design it is especially effective within a small space. The perfected MONSUN technology ensures superb baked goods that remain fresh for a long time.
The MONSUN SM is a rack oven and deck oven in one: the rack module lets you move straight to the baking area, so you can effortlessly load nine stoves at the same time. Alternatively, you can use the stove module, which locks into position (optionally available with steel or heat-retaining stone slabs) to load the stoves individually, as per a deck oven.
The MONSUN principle is as simple as it is efficient:heat is transferred directly to the dough via convection – without having to pass round other materials and heat them in the process. As a result, MONSUN ovens consume signifi cantly less energy.
There is no radiation shadow, thanks to the MONSUN alternating airflow system. The baking trays can therefore hold a much greater quantity of dough pieces than is possible with comparable models of oven.
